Ingredients 

Main Ingredients

  • 2 pieces Pita Bread toasted and broken into pieces
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell Pepper diced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Fresh Parsley chopped
  • ¼ cup Fresh Mint chopped
  • ¼ cup Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Sumac
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Toast the pita bread until crispy, then break into pieces.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, parsley, and mint.
  3. 3. Add the toasted pita pieces to the bowl.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately.
