Instructions
In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
Add the onion to the pot and cook until softened.
Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
Use a potato masher to slightly mash the potatoes in the pot.
Stir in the heavy cream and season with salt and pepper. Heat through.
Top with crispy bacon before serving.
