Ingredients 

Main Ingredients

  • 6 slices Bacon chopped
  • 4 cups Potatoes peeled and diced
  • 1 cup Onion chopped
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion to the pot and cook until softened.
  3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Use a potato masher to slightly mash the potatoes in the pot.
  5. Stir in the heavy cream and season with salt and pepper. Heat through.
  6. Top with crispy bacon before serving.
