Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 2 cans Black Beans, drained and rinsed
  • 1 can Diced Tomatoes
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 cup Vegetable Broth

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and chopped red bell pepper, and cook for another 5 minutes.
  4. Stir in the black beans, diced tomatoes, chili powder, cumin, and salt.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. Serve hot and enjoy!
