Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, chopped
- 2 cans Black Beans, drained and rinsed
- 1 can Diced Tomatoes
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 1 cup Vegetable Broth
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and chopped red bell pepper, and cook for another 5 minutes.
Stir in the black beans, diced tomatoes, chili powder, cumin, and salt.
Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
Serve hot and enjoy!
