Instructions
Remove the boudin sausage from its casing and crumble it into a mixing bowl.
Add the breadcrumbs and beaten eggs to the bowl and mix well.
Form the mixture into small balls, about the size of a golf ball.
Roll each ball in flour, shaking off any excess.
Heat the vegetable oil in a frying pan over medium heat.
Fry the boudin balls in batches until golden brown, about 3-4 minutes per side.
Drain on paper towels and serve hot.
