Ingredients

  • 1 lb Boudin sausage
  • 1 cup Breadcrumbs
  • 2 Eggs beaten
  • 1 cup Flour
  • 1 cup Vegetable oil for frying

Instructions 

  1. Remove the boudin sausage from its casing and crumble it into a mixing bowl.
  2. Add the breadcrumbs and beaten eggs to the bowl and mix well.
  3. Form the mixture into small balls, about the size of a golf ball.
  4. Roll each ball in flour, shaking off any excess.
  5. Heat the vegetable oil in a frying pan over medium heat.
  6. Fry the boudin balls in batches until golden brown, about 3-4 minutes per side.
  7. Drain on paper towels and serve hot.
