Cajun Corn and Crab Bisque

Main Ingredients
- 2 tablespoon Butter
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 1 cup Bell pepper, chopped
- 2 cloves Garlic, minced
- 2 cups Corn kernels
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 lb Crab meat
- 1 teaspoon Cajun seasoning
- to taste Salt and pepper
Melt butter in a large pot over medium heat.
Add chopped onion, celery, and bell pepper. Cook until softened.
Add minced garlic and cook for another minute.
Add corn kernels and cook for 5 minutes.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
Use a blender to puree the soup until smooth.
Return the soup to the pot and stir in heavy cream, crab meat, and Cajun seasoning. Simmer for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
