Ingredients

  • 1 lb Chorizo
  • 6 Eggs
  • 1 cup Shredded cheese
  • 4 Large flour tortillas
  • 1 tablespoon Butter
  • 1 cup Salsa optional

Instructions 

  1. Cook chorizo in a skillet over medium heat until fully cooked. Remove and set aside.
  2. In a bowl, whisk eggs. Melt butter in the skillet and scramble the eggs until cooked through.
  3. Warm tortillas in a separate skillet or microwave.
  4. Assemble burritos by layering chorizo, scrambled eggs, shredded cheese, and salsa (if using) in each tortilla. Roll up and serve.
