Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 cup All-purpose flour
- 2 large Eggs, beaten
- 1 cup Shredded coconut
- 1 cup Panko breadcrumbs
- 1 cup Vegetable oil, for frying
1. In a bowl, mix flour with a pinch of salt.
2. In another bowl, beat the eggs.
3. In a third bowl, combine shredded coconut and panko breadcrumbs.
4. Dredge shrimp in flour, dip in eggs, then coat with coconut mixture.
5. Heat oil in a frying pan over medium heat.
6. Fry shrimp until golden brown, about 2-3 minutes per side.
7. Drain on paper towels and serve hot.
