Ingredients

  • 200 g Spaghetti
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • ½ cup Red onion, thinly sliced
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the spaghetti according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, and red onion.
  3. 3. Add the cooked spaghetti to the bowl.
  4. 4. In a small bowl, whisk together the olive oil, red wine vinegar, and dried oregano. Season with salt and pepper to taste.
  5. 5. Pour the dressing over the spaghetti mixture and toss to combine.
  6. 6. Chill in the refrigerator for at least 1 hour before serving.
