  • 4 cups Corn kernels fresh or frozen
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a pot, sauté the chopped onion and minced garlic until translucent.
  2. 2. Add the corn kernels and vegetable broth. Bring to a boil.
  3. 3. Reduce heat and let it simmer for about 15 minutes.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Return the soup to the pot, stir in the heavy cream, and season with salt and black pepper to taste.
