Ingredients

  • 2 lbs flank steak
  • 1 large onion, sliced
  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 can tomato sauce (15 oz)
  • 1 can diced tomatoes (15 oz)
  • 1 cup beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add the sliced onions and bell peppers, and cook until softened.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Add the flank steak, tomato sauce, diced tomatoes, beef broth, cumin, oregano, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat to low, cover, and simmer for about 2 hours, or until the beef is tender and can be easily shredded.
  5. 5. Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and stir to combine with the sauce.
  6. 6. Serve hot with rice or your favorite side dish.
