  • 2 bulbs Fennel chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped fennel, onion, and garlic. Cook until softened, about 10 minutes.
  3. 3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Season with salt and pepper to taste. Serve hot.
