  • 2 Eggplants medium-sized, sliced
  • 1 cup Flour
  • 2 teaspoon Salt
  • 1 cup Vegetable Oil for frying

Instructions 

  1. 1. Slice the eggplants into ¼ inch thick rounds.
  2. 2. Sprinkle salt on both sides of the eggplant slices and let them sit for 10 minutes.
  3. 3. Pat the eggplant slices dry with paper towels.
  4. 4. Dredge the eggplant slices in flour, shaking off any excess.
  5. 5. Heat the vegetable oil in a frying pan over medium heat.
  6. 6. Fry the eggplant slices in batches until golden brown, about 2-3 minutes per side.
  7. 7. Drain the fried eggplant slices on paper towels.
  8. 8. Serve hot.
