Ingredients

  • 4 cups potatoes, peeled and cubed
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup kalamata olives, pitted and sliced
  • ¼ cup feta cheese, crumbled
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, cucumber, red onion, olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  4. 4. Pour the dressing over the potato mixture and toss gently to combine.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
