Main Ingredients
- 4 medium potatoes peeled and diced
- 1 medium onion chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- Heat olive oil in a skillet over medium heat. 
- Add diced potatoes and chopped onion to the skillet. 
- Cook, stirring occasionally, until potatoes are golden brown and tender, about 20 minutes. 
- Season with salt and black pepper. Serve hot.
