  • 4 cups Potatoes peeled and diced
  • ¼ cup Olive Oil
  • 2 tablespoon Red Wine Vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Fresh Basil chopped

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
