Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 bunch Kale, chopped
  • 2 Potatoes, diced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the chopped kale and diced potatoes. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  6. Season with salt and black pepper to taste. Serve hot.
