Ingredients 

Main Ingredients

  • 1 cup lentils rinsed and drained
  • 1 cup diced ham
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots sliced
  • 2 stalks celery sliced
  • 6 cups chicken broth
  • 1 teaspoon thyme dried
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the diced ham and cook for another 2-3 minutes.
  3. 3. Stir in the lentils, chicken broth, thyme, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat to low, cover, and simmer for about 30-35 minutes, or until lentils are tender.
  5. 5. Adjust seasoning to taste and serve hot.
