Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 lime, zested and juiced
  • ½ cup chopped fresh cilantro
  • 1 teaspoon salt

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, bring water to a boil. Add rice and olive oil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until rice is tender and water is absorbed.
  3. Remove from heat and let sit, covered, for 5 minutes.
  4. Fluff the rice with a fork and stir in lime zest, lime juice, cilantro, and salt. Serve warm.
