- 4 cups buttermilk
- 2 cups cooked beets, grated
- 1 cup cucumber, diced
- 4 green onions, chopped
- 2 tablespoons dill, chopped
- 2 tablespoons vinegar

1. In a large mixing bowl, combine the buttermilk and grated beets.
2. Add the diced cucumber, chopped green onions, and dill.
3. Stir in the vinegar, salt, and pepper to taste.
4. Chill the soup in the refrigerator for at least 2 hours before serving.
