Lobster Thermidor

Main Ingredients
- 2 whole lobsters about 1 ½ pounds each
- 1 cup white wine
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 2 tablespoon butter
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Preheat your oven to 375°F (190°C).
Boil the lobsters for about 8 minutes, then remove and let cool.
Remove the meat from the shells, chop it into bite-sized pieces, and set aside. Keep the shells for later.
In a saucepan, melt the butter and add the white wine. Let it reduce by half.
Add the heavy cream and bring to a simmer. Stir in the mustard, lemon juice, salt, and pepper.
Add the lobster meat to the sauce and mix well.
Fill the lobster shells with the mixture and place them in a baking dish.
Sprinkle the grated Gruyère cheese on top and bake for 15-20 minutes until golden and bubbly.
