Ingredients 

Main Ingredients

  • 2 lbs Pork shoulder, cubed
  • 1 tablespoon Olive oil
  • 1 Large onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 lb Roasted green chiles, chopped
  • 3 Large potatoes, peeled and cubed
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Heat the olive oil in a large pot over medium-high heat. Add the pork and cook until browned on all sides.
  2. Add the onion and garlic to the pot and cook until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 1 hour.
  4. Add the green chiles and potatoes to the pot. Season with salt and pepper. Simmer for another 30 minutes, or until the potatoes are tender.
  5. Serve hot and enjoy!
