  • 1.5 cups oat bran
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup milk
  • 0.5 cup honey
  • 1 large egg
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper muffin liners.
  2. In a large mixing bowl, combine the oat bran, whole wheat flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the milk, honey, egg, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
