Ingredients

  • 1 cup Rolled Oats
  • 1 cup All-Purpose Flour
  • ½ cup Brown Sugar
  • ½ cup Chocolate Chips
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 cup Milk
  • ¼ cup Vegetable Oil
  • 1 Egg
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the oats, flour, brown sugar, chocolate chips, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
