Overnight Blueberry French Toast Casserole

This make-ahead breakfast casserole is perfect for a crowd. It's loaded with blueberries and topped with a sweet, crunchy streusel.

Ingredients 

Main Ingredients

  • 1 loaf French bread cut into cubes
  • 2 cups Blueberries fresh or frozen
  • 8 Eggs
  • 2 cups Milk
  • ½ cup Heavy cream
  • ½ cup Sugar
  • 1 tablespoon Vanilla extract

Streusel Topping

  • ½ cup All-purpose flour
  • ½ cup Brown sugar packed
  • 1 teaspoon Cinnamon
  • ¼ cup Butter cold, cubed

Instructions 

  1. 1. Grease a 9x13 inch baking dish. Place half of the bread cubes in the dish and top with blueberries. Add the remaining bread cubes on top.
  2. 2. In a large bowl, whisk together eggs, milk, cream, sugar, and vanilla. Pour evenly over the bread cubes. Cover and refrigerate overnight.
  3. 3. Preheat oven to 350°F (175°C). In a medium bowl, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over the bread mixture.
  4. 4. Bake for 45 minutes, or until the top is golden and the center is set. Let cool for 10 minutes before serving.
