  • 2 medium zucchini sliced into rounds
  • ½ cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup vegetable oil for frying

Instructions

  2. 2. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, salt, and pepper.
  3. 3. Dredge zucchini slices in flour, dip in eggs, then coat with breadcrumb mixture.
  4. 4. Heat oil in a frying pan over medium heat.
  5. 5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
  6. 6. Drain on paper towels and serve warm.
