- 1 cup quinoa rinsed
- 1 can chickpeas drained and rinsed
- 2 cups cherry tomatoes halved
- 1 tablespoon olive oil
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
1. Cook the quinoa according to package instructions.
2. In a mixing bowl, combine the cooked quinoa, chickpeas, and cherry tomatoes.
3. Drizzle with olive oil, and season with salt and black pepper. Mix well.
4. Serve warm or chilled.
