  • 4 cups Rocket (Arugula) washed and dried
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Parmesan Cheese shaved
  • 2 tablespoon Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions 

  1. 1. In a large salad bowl, combine the rocket and cherry tomatoes.
  2. 2. Drizzle with olive oil and balsamic vinegar.
  3. 3. Toss gently to combine.
  4. 4. Season with salt and black pepper to taste.
  5. 5. Top with shaved Parmesan cheese.
  6. 6. Serve immediately.
