Ingredients

  • 4 lamb shanks
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Brown the lamb shanks on all sides, then remove and set aside.
  3. Add the onion, carrots, and garlic to the pot. Cook until softened.
  4. Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot.
  5. Return the lamb shanks to the pot. Add rosemary, salt, and pepper.
  6. Cover and transfer to the oven. Braise for 2.5 to 3 hours, until the meat is tender.
  7. Remove the rosemary sprigs before serving. Enjoy!
