Smashed Cucumber Salad

Main Ingredients
- 2 large cucumbers smashed and cut into bite-sized pieces
- 1 teaspoon salt
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 tablespoon sesame seeds toasted
1. Smash the cucumbers with the side of a knife and cut them into bite-sized pieces.
2. Sprinkle the cucumbers with salt and let them sit for 10 minutes. Drain any excess liquid.
3. In a mixing bowl, combine the garlic, soy sauce, rice vinegar, sesame oil, and sugar.
4. Add the cucumbers to the bowl and toss to coat.
5. Sprinkle with toasted sesame seeds before serving.
