Southwest Breakfast Burritos
Delicious and hearty breakfast burritos with a Southwest twist.

Main Ingredients
- 4 large eggs
- 1 cup shredded cheese cheddar or Mexican blend
- 1 cup black beans drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 medium bell pepper diced
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 pinch salt to taste
- 1 pinch black pepper to taste
1. Heat olive oil in a skillet over medium heat. Add bell pepper and cook until softened, about 5 minutes.
2. In a mixing bowl, whisk eggs with salt, black pepper, chili powder, and cumin.
3. Pour the egg mixture into the skillet with the bell pepper. Cook, stirring occasionally, until eggs are scrambled and fully cooked.
4. Add black beans and corn to the skillet. Cook until heated through, about 2 minutes.
5. Remove skillet from heat and stir in shredded cheese until melted.
6. Warm flour tortillas in a microwave or on a skillet. Divide the egg mixture evenly among the tortillas and roll them up into burritos.
7. Serve immediately with your favorite salsa or hot sauce.
