  • 2 medium Potatoes diced
  • 4 Eggs beaten
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a frying pan over medium heat.
  2. 2. Add the diced potatoes and cook until golden brown, about 10 minutes.
  3. 3. Sprinkle chili powder, salt, and black pepper over the potatoes. Stir well.
  4. 4. Push the potatoes to one side of the pan and pour the beaten eggs into the other side.
  5. 5. Scramble the eggs until fully cooked, then mix them with the potatoes.
  6. 6. Serve hot.
