Main Ingredients
- 2 large sweet potatoes peeled and chopped
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. In a large pot, sauté the onion and garlic until fragrant.
2. Add the chopped sweet potatoes and vegetable broth. Bring to a boil, then simmer until the sweet potatoes are tender.
3. Use a blender to puree the soup until smooth.
4. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper. Heat through and serve.
