Ingredients 

Main Ingredients

  • 200 g rice noodles
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • ¼ cup roasted peanuts, chopped

Dressing

  • 3 tablespoon lime juice
  • 2 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon red chili flakes

Instructions 

  1. 1. Cook rice noodles according to package instructions. Drain and rinse with cold water. Set aside.
  2. 2. In a large mixing bowl, combine the cooked rice noodles, red bell pepper, carrot, cilantro, mint, and peanuts.
  3. 3. In a small bowl, whisk together lime juice, fish sauce, soy sauce, brown sugar, garlic, and red chili flakes until the sugar is dissolved.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
