Tortellini Soup Recipe
A hearty and comforting soup with cheese tortellini, perfect for chilly days.

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 package cheese tortellini (9 oz)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- to taste salt and pepper
- 2 cups spinach fresh
- ½ cup grated Parmesan cheese for serving
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the chicken broth and diced tomatoes. Bring to a boil.
Add the cheese tortellini, dried basil, and dried oregano. Reduce heat and simmer until the tortellini is cooked, about 10 minutes.
Season with salt and pepper to taste. Stir in the fresh spinach and cook until wilted, about 2 minutes.
Serve hot, topped with grated Parmesan cheese.
