Main Ingredients
- 1 cup red lentils
- 1 medium onion chopped
- 1 medium carrot chopped
- 2 tablespoon olive oil
- 1 tablespoon tomato paste
- 6 cups water
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon paprika
Heat olive oil in a pot over medium heat.
Add chopped onions and carrots, sauté until softened.
Add tomato paste, cook for another minute.
Add red lentils, water, salt, cumin, and paprika. Bring to a boil.
Reduce heat and simmer for 20-25 minutes until lentils are tender.
Blend the soup until smooth. Serve hot.
