Ingredients

  • 1 cup red lentils
  • 1 medium onion chopped
  • 1 medium carrot chopped
  • 2 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 6 cups water
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onions and carrots, sauté until softened.
  3. Add tomato paste, cook for another minute.
  4. Add red lentils, water, salt, cumin, and paprika. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. Blend the soup until smooth. Serve hot.
