Ingredients

  • 3 pcs Bananas ripe and mashed
  • ½ cup Sugar
  • ¼ cup Coconut oil melted
  • 1 teaspoon Vanilla extract
  • 1 ½ cup All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large mixing bowl, mash the bananas until smooth. Add the sugar, melted coconut oil, and vanilla extract. Mix well.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
