- 2 cups Broccoli florets
- 1 cup Chicken broth
- 1 cup Milk
- 8 oz Velveeta cheese, cubed
- 1 tablespoon Butter
- 1 small Onion, chopped
- 1 clove Garlic, minced
- to taste Salt and pepper
1. In a pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
2. Add the broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10 minutes.
3. Stir in the milk and Velveeta cheese cubes. Cook, stirring frequently, until the cheese is melted and the soup is smooth.
4. Season with salt and pepper to taste. Serve hot.
