Irish Lamb Stew Recipe

Main Ingredients
- 2 lbs Lamb shoulder, cut into chunks
- 4 cups Beef broth
- 1 cup Water
- 4 Large potatoes, peeled and cubed
- 3 Carrots, peeled and sliced
- 1 Large onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 teaspoon Dried thyme
- 2 teaspoon Dried rosemary
1. Heat a large pot over medium heat. Add lamb and cook until browned on all sides.
2. Add the onion and garlic, cook until softened.
3. Pour in the beef broth and water. Bring to a boil.
4. Add potatoes, carrots, salt, pepper, thyme, and rosemary. Reduce heat and simmer for 1.5-2 hours.
5. Stir occasionally and cook until lamb is tender and vegetables are cooked through.
6. Serve hot and enjoy!
