Ingredients 

Main Ingredients

  • 2 cups Rotini pasta uncooked
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell peppers diced, mixed colors
  • ½ cup Red onion thinly sliced
  • ¼ cup Olives sliced
  • ¼ cup Feta cheese crumbled

Dressing

  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the pasta, cherry tomatoes, cucumber, bell peppers, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, and dried oregano. Season with salt and pepper to taste.
  4. Pour the dressing over the pasta salad and toss to combine. Serve immediately or refrigerate until ready to serve.
